Back to the Bible in Bermuda

It is with deep sadness that I must advise you of the passing of our dear brother Mr. Herbie Knight.

He passed peacefully at KEMH yesterday morning. I was with him and Marianne his wife all day yesterday and continually reminded them of your care and concern for both of them.

Herbie exemplified the Willowbank story. The story of what life can be when entrusted to Jesus Christ. A life of generosity born out of love for Jesus Christ in gratitude for what Jesus did for him on the cross. Read More

We've all heard that breakfast is the most important meal of the day, well, at the guesthouse Willowbank, from the time the big bell rings for breakfast to begin, it's also memorable. Herbie Knight is the breakfast chef and he aims to please. In 2000 he was awarded the Visitor Industry Partnership (VIP) Sunshine Award.

"I treat people like I want to be treated," Says Mr. Knight. "On vacation people spend a lot of money. You can either make a person's vacation or ruin it." And he does his best to make it by entertaining guests with comedy and singing - but he wasn't always a happy person.

"I was brought up good but I turned out nasty," says Mr. Knight. "I drank a lot. I'm an alcoholic. I haven't had a drink in 40 years. I got very sick - my stomach - I couldn't drink. It put me in hospital a couple of times and Dr. Dickinson reached out to me, he took me to a conference in the Pocono's in Pennsylvania. I was walking on the beach and I found a coin and it said, 'IN GOD WE TRUST', and I asked God for help and it worked." He says his mother and brothers always kept praying for him.

Mr. Knight then worked at construction with Joel Benevides who was on the board at Willowbank and recommended him for a job. "I used to work outdoors in maintenance," he says. "I did everything, paint roofs, electrical, masonry; I built a lot of the patios and new buildings. I like to watch people work so if it comes my way I can do it."

He says his chance came when the breakfast chef didn't show up. "I did breakfast one morning and I've been cooking ever since. I like to see people's faces, how they enjoy it." He loves to work in the early mornings. "I come in at 4 in the morning. I make eggs, hash brown potatoes, sausage - it's a buffet. I do breakfast by myself. I love to do it, nobody to get in my way."

Mr. Knight is happy doing what he's doing now and sorry he missed so much when he was drinking. "I always thought people were against me. I found out a lot of people want to help," he says and now he takes the time for others. "I have kids coming to look for me year after year before they even sign up they are looking for me."
